La sala está llena de agua. Estanterías del suelo al techo acogen más de 4.000 botellas de un centenar de países. Es el laboratorio Dr. Oliver Rodés. La cata del agua no es empresa fácil. De pequeños aprendimos aquello de “inodora, incolora e insípida”. No es exactamente así, pero se le acerca bastante. En el caso del vino, la primera selección ya es por su color, por su cuerpo, por su olor. Nada de esto es posible con el agua. Nos queda el sabor, porque hay aguas más insípidas que otras. “Tenemos que fiarnos casi exclusivamente del gusto”, dice Oliver-Rodés.&lt;br /&gt;&lt;br /&gt;Los pioneros. Han pasado dos siglos desde que empezó a embotellarse. Los primeros clientes eran miembros de la corte y de la burguesía centroeuropea que, tras largas temporadas en balnearios, querían continuar bebiendo el agua que les había sentado tan bien. Las primeras botellas eran fabricadas con cerámica, después llegaría el vidrio y los plásticos y hasta últimamente el tetrabrik, “aunque lo más habitual es la botella transparente, que da sensación de naturalidad”.&lt;br /&gt;&lt;br /&gt;Empieza la cata. El doctor Rodés coge el primer vaso de agua, curándose en salud: “Es muy difícil opinar sobre la composición de un agua. Por ejemplo, las características del vino siempre vienen condicionadas por el olor. Y entonces se pueden decir muchas cosas. En cambio, el agua prácticamente no tiene olor, sólo tiene gusto. En esta agua que pruebo predomina el bicarbonato y el calcio. Parece que hay muy poco de sodio. Podría ser una de las muchas aguas que hay en España con esta composición”. El catador acierta. Se niega a dar el nombre, pero sí una explicación sanitaria. “Las aguas minerales en las que predominan los bicarbonatos y el calcio son abundantes en España debido a la geología del país. El bicarbonato alcaliniza la orina y también el pH gástrico. El calcio es esencial para la normal actividad del sistema nervioso y para la formación de los huesos, especialmente en niños”.&lt;br /&gt;&lt;br /&gt;En España se comercializan 135 marcas de agua embotellada. Pueden parecer muchas, pero son sólo la mitad de las que se venden en países como Alemania o Italia. Dos países con mucha tradición.&lt;br /&gt;&lt;br /&gt;¿Del grifo o embotellada? El sabor del agua embotellada difiere del agua de distribución pública, la del grifo, que procede mayoritariamente de pozos, ríos o pantanos. “Aguas sin composición constante. La mayoría de las grandes ciudades tienen además varios puntos de captación y eso provoca una mezcla que no es uniforme. Como depende de la mezcla, unos días sabe mejor que otros”. Rodés asegura que el agua del grifo es potable en todas las ciudades grandes y medianas. Las aguas de consumo público han de ser tratadas obligatoriamente para asegurar su potabilidad, como mínimo con cloro. “Los tratamientos son cada vez más complejos porque cada vez las aguas están más contaminadas. La política de la Administración es tratar las aguas residuales, pero nunca resulta un agua perfecta. En cambio, las aguas minerales naturales y de manantial no pueden ser tratadas. Deben ser envasadas tal como se captan”.&lt;br /&gt;&lt;br /&gt;El doctor ataca el segundo vaso. Las cosas se complican. Silencio. “En esta agua también predomina el bicarbonato y el calcio, pero no en tanta cantidad. Es más fina que la anterior, eso significa que tiene menos sales disueltas. Un agua adecuada para acompañar cualquier comida, pero sería mucho más agradable si estuviera más fría”. La descripción es correcta. “Este tipo de aguas de mineralización débil u oligometálicas son adecuadas para la preparación de biberones, así como para el té y el café”.&lt;br /&gt;&lt;br /&gt;En los últimos tiempos, el agua se ha transformado en un producto tan de moda que incluso se pide por su marca. “Hay varios motivos. Uno sería el gusto por consumir productos naturales sin aditivos ni tratamientos; también por el interés de cuidar el cuerpo. El agua no aporta calorías, pero es un alimento básico. Hay un efecto de nivel de vida. En los restaurantes ya no se concibe una jarra de agua del grifo”.&lt;br /&gt;&lt;br /&gt;El efecto del gas. El tercer vaso es un alivio. Cualquiera podría adivinar qué esconde entre esas paredes de cristal grueso. “Hasta con el olor se nota que hay gas. Es una de las aguas carbónicas que hay en el mercado español con más sales disueltas. Se recomiendan para facilitar la digestión. Es un producto que gusta a mucha gente. Sin embargo, en España el consumidor compra más agua sin gas que con gas. El gas de esta agua es natural, aunque está permitido añadir gas carbónico siempre que también se especifique en la etiqueta. Las aguas con gas son más agradables si contienen sales disueltas en mayor cantidad”. A diferencia de otros países centroeuropeos, en España el 96% del agua envasada es sin gas, y un 4% aproximadamente, con gas. Los precios de venta de las aguas envasadas son muy inferiores a los de otros países de la UE. En 2005, el consumo ha llegado a 143 litros por habitante, y está previsto alcanzar los 150 entre 2006 y 2007.&lt;br /&gt;&lt;br /&gt;Sin caducidad. La siguiente cata supone otro reto. No tiene olor, apunta con cierta preocupación. Y añade: “Ésta es diferente a todas las que he probado antes. También tiene calcio, pero hay más magnesio y, por tanto, es más dura”. El agua es un producto no perecedero si está bien embotellada. “El problema es que los envases de plástico son los que tienen una vida limitada y son permeables. Los gases pueden atravesar el material. Su correcto almacenaje puede variar el sabor”.
